Enabled up/down-scaling of the services

* Changed the default-port of the services, so that all services can be
  started local in parallel
* The queriable Kafka-Streams-Apps derive their local address automatically,
  so that they can be scaled up/down in Docker-Compose
* Added traefik as reverse-proxy to the setup
